Radicchio is a leafy vegetable that is a subspecies of chicory. It resembles a small head of red cabbage with variegated maroon leaves with contrasting white veins. Radicchio is crunchy, has a bitter taste with a hint of spices. After cooking, the leaves become dark brown, their bitterness softens and they acquire a slight sweetness.
